Sometimes the best kind of comforting meal is the one you used to love as a kid. My mom used to make Porcupine Meatballs and then I made them myself once I became a mom. I came up with my own version that both reminded me of growing up in the Midwest as well as brought some new touches in! 😊 But the name might be the best part of this recipe!😂 The rice in the meatballs look like little porcupine spikes after they're cooked.🍚 You can either bake the meatballs first and let them finish cooking
